The gardens are ready, hoed and weeds are still being held at bay. The tomatoes are growing like those wannabe weeds, and look like they are crying out for a nice jar to live in over the winter. Unfortunately they are still too green, and not looking to join that canner yet. As a result, we will have to change the date of the canning class until August 29 or 30.
What are we doing? Well, once they start ripening, they go nuts. Tomatoes are so versatile, though. With one batch, you can make soups, sauces and stewed tomatoes. This class we are going to concentrate on using tomatoes to make a spaghetti sauce, and use the extra juices to make a nice broth which can be used as a base for other sauces, and savoury dishes..
The next day we are making salsa, again having extra broth ready to make into other tomatoey treats. Remember Aspic? Let us know which day or days you want to join us.
In the meantime, enjoy the sun and beautiful weather….September is approaching fast!
